Supermarkets frequently stock kangaroo meat.

It's tasty, but it's not something you'll eat often because it's difficult to prepare properly. You can either cook it very quickly and no more than medium-rare with an incredibly hot technique, or you can cook it very low and gradually; anything in between is inedibly harsh and unappealing. The rapid path is not suitable for beginners, and it necessitates the use of appropriate equipment.

It tastes a lot like venison. Venison and roo recipes are interchangeable. But roo is more difficult to master (I've cooked both; venison is a breeze).
